I want to have a healthy diet, and I know you do too, right? The problem, at least for me, is that there is so much conflicting information – and most of it is simple opinion – about what healthy actually is. My personal perspective is pretty simple: if a specific food does not have a measurable negative impact on my health, then I’m ok eating it, and I’m comfortable giving it to my children. Skinny frosted strawberry lemonade – my personal strawberry obsessed, diet friendly version of Chick Fil a’s Frosted Lemonade – is made with fresh, ripe strawberries, meyer lemons, greek yogurt and stevia. This recipe yields 4 servings, with 80 calories, 10g carbs, 0.5g fat, and 4g protien per serving.
So much has changed for me this year – moving from Utah to South Carolina with literally 7 days to pack house and drive cross country was definitely the highlight (insert snarky font here), but the big, enormous upside is that the quality of fresh produce is significantly better down here in the deep, deep south. Example: in the middle of February, the best commercially grown strawberries available are in season 6 hours south of us in Plant City, Florida. If you can find these in your local stores, get them! They are a different variety of berry and taste much, much better than the California variety. If fresh strawberries are out of season, I use whole frozen strawberries – they’re picked and frozen at the height of the season when they’re perfectly ripe and are quite delicious when blended in a drink or smoothie. Be sure to read the ingredient list before buying to ensure there’s no additional sugar or syrup added.
I like to use low fat greek yogurt with live bacteria cultures to maximize the healthy factor, but any low fat or fat free yogurt will work just as well. I do like to freeze the yogurt to get the thickest milkshake consistency – just pop the yogurt in the freezer overnight and you’re good to go. The berries and yogurt could be frozen together as a make ahead option too. We’ve been doing quite a bit of bulk cooking and freezing this month, and loving it! 3 cups frozen strawberries or fresh hulled strawberries
1/2 cup low fat greek yogurt
3/4 cup powdered stevia
2/3 cup lemon juice
2 cups ice
1 1/2 cups cold water
- In a large pitcher, whisk together 3/4 cup powdered stevia, lemon juice and 1 1/2 cups water.
- Combine strawberries, greek yogurt, lemon juice mixture, and 2 cups ice in blender until smooth.
