ONE POT BACON CARBONARA + GLUTEN FREE OPTION

Ingredients

  • 16 ounces of spaghetti (or gluten free pasta)
  • 4 1/2 cups of water
  • 1 tablespoon of canola oil
  • 4 slices of bacon
  • 3 cloves of garlic
  • 2 eggs
  • 1/2 cup of skim milk
  • 3/4 cups of shredded Parmesan cheese
  • 8 basil leaves
  • Salt and pepper to taste

 

Instructions

  1. Coat a large pot or pan with canola oil and place over medium – high heat. Once pan is preheated, cut the bacon in half and put it in the pan. Cook until crispy, flipping once, approximately 5 minutes. Remove from pan and set aside to cool. Drain bacon grease from pan and reserve in a clean jar if desired. Once bacon is cool, crumble it up and set it aside.
  2. In a small bowl, whisk the eggs until well combined and then stir in the shredded Parmesan cheese. Set aside.
  3. Peel and finely dice the cloves of garlic. Saute the diced garlic over medium heat for 2 minutes.
  4. Add the uncooked spaghetti and 4 1/2 cups of water to the pan and increase the heat to high. Stir until water is fully absorbed. (Gluten Free Option: Omit this step and cook a box of gluten free pasta according to package instructions. Drain.)
  5. Reduce heat to low. Pour the egg and cheese mixture into the pasta and stir quickly to combine. Sprinkle the crumbled bacon on top and mix it in, then add sale and pepper to taste.
  6. Serve with basil leaves, either whole or cut into ribbons.
  7. Enjoy!

ONE POT SKINNY ALFREDO WITH ROASTED CHERRY TOMATOES

Ingredients

  • 1 pound of Penne pasta
  • 1 pint of fat free cottage cheese
  • 1/2 cup skim milk
  • 1 clove of garlic
  • 1 teaspoon of salt
  • 1 pint of cherry tomatoes
  • 2 tablespoons of canola oil
  • 4 1/2 cups of water

Instructions

  1. Coat pan with canola oil and place over medium-low heat. Add tomatoes and roast until evenly browned and bursting, stirring occasionally.
  2. While tomatoes are roasting, peel 1 clove of garlic and add to a blender or food processor with 1/2 cup of skim milk, 1 pint of cottage cheese, and 1 teaspoon of salt. Blend until smooth. Set aside.
  3. When tomatoes are evenly roasted, remove them from the pan and set aside. Add 1 box of pasta and 4 1/2 cups of water or broth to the pan. Turn the heat up to high and stir constantly until the pasta is fully cooked and the water has been absorbed.
  4. Reduce the heat to low, pour the cheese sauce mixture over the pasta, and stir until heated through.
  5. Remove from heat and garnish with roasted tomatoes and shaved Parmesan cheese. Serve immediately and enjoy!

ONE POT PASTA AL LIMONE WITH ROSEMARY CHICKEN

Ingredients

  • 1 pound uncooked pasta
  • 4 – 6 uncooked chicken thighs
  • 3 whole meyer lemons
  • 3 tbsp olive oil
  • 4 heavy cream
  • 1 cup chopped kale
  • 1 cup grated Parmesan cheese
  • 1 sprig of fresh Rosemary
  • 1/2 cup chicken or vegetable stock
  • 4 1/2 cups water

 

Instructions

  1. Zest and then juice 2 of the lemons. Slice the third lemon for garnish. Set aside.
  2. Coat a large pan with 3 tbsp of olive oil and place over medium heat.
  3. Finely chop 1 tbsp rosemary with 1 tbsp lemon zest. Gently lift the skin on the top of the chicken thighs and rub the mixture between the meat and the skin. Smooth skin back and lightly salt / pepper the chicken thighs.
  4. Place thighs face down in the heated pan and cook until the juices are moving through the top of the chicken – approximately 10-15 minutes – then flip and cook until juices are clear. Remove chicken from pan and set aside.
  5. Add 1/2 cup chicken or vegetable stock to the pan and deglaze (stir the liquid around until all the yummy cooked on bits of chicken have dissolved in the liquid).
  6. Add lemon juice, remaining lemon zest, 4 1/2 cups water, and 1 pound of uncooked pasta.
  7. Turn heat to high and stir until pasta starts to soften, then add the heavy cream, parmesan cheese, and kale. Continue to stir until pasta is al dente, then remove from heat.
  8. Place cooked chicken on top of pasta and garnish with rosemary and lemon slices. Serve immediately.
